Recipe: Mediterranean Inspired Rice
This side dish pairs well with chicken or beef.
This side dish was made up when I bought fresh feta last week and wanted to find new ways to use it. After combining the few ingredients I had at home, this side dish was born and it is something I will definitely make again. Hope you enjoy it as much as I did.
- 1 cup Brown Rice
- 6 Cherry Tomatoes - diced, seeds removed and cut into fours
- ½ cup Onion
- 1 tbsp Garlic
- ¼ cup Feta
- Olive Oil
In a frying pan, sauté onions in olive oil until translucent. Add minced garlic. Cook for one to two minutes and then add tomatoes. Cook for another minute. Add cooked rice and more olive oil - enough so the rice isn't extremely dry. This will vary depending on what rice you use. Add salt and pepper to taste. Cook for one or two minutes. Remove from heat and stir in feta. Serve.
